Ginger Mug Cake Recipe

POP Ginger Mug Cake

Ingredients:
• 4 tbsp almond flour
• 1.5 tbsp ground ginger crystals
• 1/4 tsp baking powder
• 2 tbsp organic mayo
• 2 large egg yolks
• 2 tsp water

Directions:
Grind 3 packets of POP ginger crystals into a fine powder. Set aside 1.5 tbsp of ginger powder for the cake batter.

Ginger Glaze:
Using the leftover ginger powder, place it in a small bowl and slowly stir in a few drops of milk to make a smooth, pourable glaze. Set aside.
Measure dry batter ingredients into a mug and mix completely with a fork.
Add the mayo, egg yolk, and water. Stir the batter well and let sit 1-2 minutes.
Microwave for 1 minute or until cake rises to just above the top of the mug.
Drizzle with ginger icing and sprinkle top with ginger crystals. Enjoy warm!
